Lucy Greer with Greer’s Markets has an easy dinner idea that makes for quick cleanup!
INGREDIENTS:
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon curry powder
- 1 red bell pepper, chunked
- 1 yellow bell pepper, chunked
- 1 orange bell pepper, chunked
- 1 red onion, chunked
- 2 zucchini squash, cut into 1/2″ thick half moons
- 1 tablespoon olive oil, divided
- 1-2 pork tenderloin, cut into bite size pieces
STEPS:
Preheat oven to 425 degrees.
Stir salt, pepper, garlic powder, thyme, paprika, and curry powder together in a small bowl. Set aside.
Line a sheet pan with aluminum foil and spray with nonstick spray. Toss peppers, onions, 2 teaspoons olive oil, and 1 teaspoon spice mix together on the sheet pan. Spread out evenly.
